Horiatiki means “of the village.” It’s the traditional and well-known Greek salad that highlights summer produce such as fresh, juicy tomatoes, crisp cucumber, and crunchy peppers.


Ingredients
2 tbsp
34 cup
olive oil
14 cup
red wine vinegar

green bell peppers
1
English cucumber
1
large heirloom or field tomato
1
small red onion
2 cans (19 oz/540 ml each)
low-sodium chickpeas
14 cup
pitted Kalamata olives
14 cup
crumbled feta cheese
Black Pepper, to taste

Preparation
  1. Using Funnel, add dressing mix, oil, and vinegar to Cruet. Screw on lid; shake to mix. If making ahead, store in fridge up to 1 week.
  2. Chop peppers, cucumber, tomato, and onion. Drain and rinse chickpeas. Place in a large bowl.
  3. Add 14 cup dressing. Gently toss to mix. Add olives and cheese. Taste; add more dressing, if desired, and season with pepper.
Tips

Whether you call them chickpeas or garbanzo beans, these legumes are a great source of protein and fibre.
