Ingredients


Makes: 4 servings
  • 1 C (250 ml) uncooked white rice
  • 2 C (500 ml) water
  • 1 Tbsp (15 ml) Miso Broth Mix
  • 1 can (19 oz/540 ml) chickpeas
  • 2 C (500 ml) frozen edamame, defrosted
  • 1 1/2 Tbsp (22.5 ml) lime juice
  • 1-1 1/2 Tbsp (15-22.5 ml) Asian Stir-Fry Seasoning
  • 1 small English cucumber
  • 1/2 avocado
  • 1 C (250 ml) snow peas
  • 4 C (1000 ml) baby gem lettuce leaves
  • 1/3 C (80 ml) Sesame Ginger Dressing, prepared
  • Toppings (optional): Garlic & Onion Nutritional Yeast Topper, pickled ginger, red onion rings

Preparation


 
  • Stir together rice, water, and broth mix in Multipurpose Steamer. Top with tray; microwave uncovered, on high, 16–18 min.
  • Meanwhile, drain and rinse chickpeas. Place in bowl with edamame, lime juice, and seasoning. Toss to combine.
  • Cut cucumber into rounds. Slice avocado.
  • Once cooked, divide half of rice between four bowls; reserve remaining rice for use at a later date. Arrange chickpea mixture, cucumbers, avocado, snow peas, and lettuce in bowls. Drizzle dressing on top; add additional toppings, if desired.

Tip: Use remaining rice to make burritos the next day.
